__SALUTATION__
This Thanksgiving, I am reflecting on the wonderful year I've had and all the blessings in my life, like my beautiful children and the job that I love to do.
This season always reminds me how grateful I am to be able to serve not only my family, but the #AD77 community that I love.
As we give thanks today, let's also remember those who are without, and focus on the things we have and not the things we don't.
Cheers,
Assemblymember Tasha Boerner
Assemblymember, 77th District
P.S. My office is available every day to talk with you about your concerns or help connect you with resources. You can reach us at (858) 481-7704 or Assemblymember.Boerner@assembly.ca.gov.
(Adapted by #TeamTasha from this recipe, by Mary Neumann)
Ingredients
- 2 nine-inch pie crusts, store-bought
- 8 Granny Smith apples, peeled, cored, and diced
- ½ cup white sugar
- ½ cup packed dark brown sugar
- ¼ cup and 1 T water
- ½ cup unsalted butter, cut into cubes
- 3 T all-purpose flour
- 1 tsp cinnamon
- ¼ tsp nutmeg
- 1 T pure vanilla extract
Instructions
- Peel the apples and dice into small cubes. You can slice them if you prefer, but dicing them creates a more satisfying bite. Place the apple bits into one prepared pie crust in a glass or ceramic pie pan.
- Roll out the other pie crust and slice into thin ribbons. Lay the ribbons in a lattice over the top of the apples in the prepared pie crust.
- In a large saucepan or medium pot, combine the white sugar, brown sugar, and water. Stir just a bit to combine, then turn the stove on to medium or medium-low heat and leave it alone. Using a metal whisk, you can swipe down the sides but you should generally leave the sugar alone until it starts to boil and thicken. To mix, swirl the pan.
- Once the mixture is boiling, add the butter one or two tablespoons at a time, whisking constantly to prevent burning. The mixture will bubble up rapidly and continue to thicken. Once you've added all the butter, turn the heat to low and whisk in the flour (about 1 tablespoon at a time), nutmeg, cinnamon, and vanilla.
- Pour the caramel mixture gently over the top of the apples and lattice pie crust, pouring slowly so the mixture doesn't spill or drip over the sides.
- Bake for 15 minutes at 375 degrees F. Reduce the temperature to 350 degrees F and continue baking for 35 to 45 minutes. Baking times may vary; you may have to use a pie crust shield or layer of tin foil to protect the edges of the pie from burning. Serve warm and enjoy!
